Find the Rainbow

I took some inspiration from this cake I've seen on a few blogs....


To make some rainbow cupcakes for Pete's St. Patricks Day party. I'm not sure how they got the cake so vibrant! I guess maybe I needed to add more food coloring. (they still taste good though!)


If only there were a pot of gold at the end of this rainbow!

The secret to the vibrant color is using paste food coloring not the liquid we usually have in the cupboard. You put a toothpick into the paste and add a little of the color at a time until it reaches the one you want. Your cupcakes look great and did I not teach you that the pot of gold at the end of the rainbow is having friends with which to share your rainbows?

I had the same experience with baking cupcakes for daycare for Mac's 1st birthday. I thought it would be cool to make blue and green cupcakes w/yellow cake mix, but they came out looking all moldy and there was no WAY I was sending them in. I didn't want him to be "that kid!"
